Les Noisetiers, our peaceful village house beside the river Charente will be your home-from-home for the duration of your stay.
During your time with us you will be cooking up a storm in our cookschool kitchen, honing your cookery skills and learning to make dishes you will want to recreate at home time and again for family and friends.
This is a very hands-on cookery course and the emphasis is very much on locally sourced seasonal ingredients. I'll be passing on to you lots of kitchen tips and tricks and we will enjoy sampling all the dishes you have created for lunch and supper each day. Ingredients you are likely to be using include locally sourced duck, Limousin beef and lamb, seasonal fruit and vegetables, local cheeses including the renowned regional goats' cheeses, nut flours and oils from our local mill, seafood from the nearby Atlantic coast and herbs and salads from our garden.
Each day we will prepare dishes for lunch and a three course meal to enjoy with wine in the evening. Some of the skills we will cover include new breadmaking techniques, pastry work, ice cream, sauces and dressings, soufflés and seafood cookery. As we only take small groups we endeavour to incorporate particular dishes and techniques you would like to master, making it a very personal experience for all our guests. On the last evening of your stay there will be a Grand Diner including a champagne reception to celebrate your achievements.
Your holiday will not be all work and no play. When the afternoon session is over you will have time to relax and unwind in our comfy salon, while away some time beside the river, stroll around the village, take a bike ride or a trip upriver in our canoe. ARRIVAL/DEPARTURE
You are welcome to arrive any time after 4pm on your first day to give you time to settle in before supper in the evening.
We will say our fond farewells after a leisurely breakfast on the last morning.
